Baked Amaretto Peaches
6 large firm Peaches
2 tablespoons butter
1 1/2 tablespoons sugar
3/4 cup macaroon cookie crumbs
1 egg yolk, beaten
1 tablespoon brandy
6 teaspoons Amaretto
1/4 cup water
Peel peaches, cut in half and remove pits. Scoop out a little pulp. Mash pulp. Cream butter and sugar and mix with crumbs, peach pulp, egg yolk and brandy. Fill peaches with mixture. Arrange in a buttered baking dish and sprinkle Amaretto on each. Pour the water into the dish, bake at 350 degrees F. for 20 minutes or until peaches are tender but still firm. Serve warm.
Jasper's Notes: The Italian term amaretto refers to a sweet liquor made from a basic infusion of the stones of fruit such as peaches and not from almonds as most people think. I like to serve this with some crispy amaretti biscotti, a dollop of freshly whipped cream and balsamic reduction sauce!
